Noodle Soup
My delicious noodle soup. No added salt. The taste come from combination of ingredients.
Crispy & Frangrance Eggplant
I am happy to DIY finger licking snack for my tea-time, those ingredients as following;
- Eggplant – select young eggplant is less seeds
- Rosemary – own growth
- Egg yolk – village chicken is fragrance and orange yolk egg
- Baking flour / tempura flour
- Salted Butter
STEP 1 Mix tempura flour with egg yolks.
OR combination of baking flour, baking powder and egg yolks.
STEP 2 Add milk slowly and beat until batter is smooth.
STEP 3 Dip sliced eggplant into batter, thinly coated, allow excess to drip off.
STEP 4 Garnish with rosemary on top of eggplant.
STEP 5 Grill with butter until golden brown.
Tips:
(1) Home made tempura flour; 1 cup flour + 1 tbsp rice flour + 1 tbsp cornstarch.
(2) Use your normal batter recipe but use ICE water, with ice cube even better. The just dip are fry/ grill. No need buy prepackaged tempura flour.
(3) No to over mix the batter. I use a pair of chopsticks and roughly mix with a few stir and use immediately without worrying about the little lumps.
FOODS ART AND SCIENCE – Yolks contribute to the color, flavor and texture. Baking powder is a leavening agent, that cause batters to rise when baked. The leavener enlarges the bubbles which are already present in the batter produced through creaming of ingredients.
Sweet Potato + Dill + Red Bean
I am happy to DIY sweet potato bun for breakfast, those ingredients as following;
- Sweet potato
- Dill
- Red bean, alternative ingredient cheese.
- Egg yolk
- Flour
thin coated with flour, and then brush with egg yolk.
Pumpkin Creamy Soup
Ingredients
- stock chicken or seafood
- pumpkin, use blender
- russet potatoes (use 1/5 of quantity of pumpkin), use blender
- carrot, use chopped
- salt
fruits, nuts & seeds ( no blender )
- toasted pumpkin seeds (pepitas)
- pine nuts
- dried cranberries, use chopped
- ground nutmeg, use blender
low heat frying onion garlic with oil, pouring stock & ingredients from blender, carrot to boil until tender, adding desired fruits, nuts & seeds.
Garnishing with green herbs, ENJOY aromatic PUMPKIN SOUP.
Pan fry russet potatoes
Don’t feel eating rice, then consider this russet potatoes !
Ingredients
- russet potatoes
- coriander
- white sesame
- a bit salt
- little amount of water
kitchen utensil are corrugated knife, frying pan.
Steam Chicken Fillet
STEAM CHICKEN inner FILLET
- chinese sausage ( pei fung extra lean 6862 @ RM6.99/100g )
- goji berry
- garlic
- small red onion
- young ginger
- light soy sauce (仙女生抽)
- white pepper powder
- a bit salt
- corn flour
Tips :
To steam fried garlic & onion with chicken fillet only one minute, then open cover & serve on table, you can smell good with hot steam.

No fry food made kitchen oily for housekeeping.
You can try to steam chicken inner fillet with mushroom, red date but the taste will be different.
Traditional Hakka Pan Cake
Ingredients
- Dried Small Shrimp (must fry until aromatic before mixing with flour)
- Fresh Prawns (coarse chop, then must fry it until aromatic before mixing with flour)
- Multi-purpose flour
- 九菜
- water
- salt
Turmeric Rice
Boring to look at rice in white color? Its can be blue, yellow, etc..
D.I.Y. aromatic rice in yellow color!
- 1 cup of long grain basmati rice
- 3/4 cup of water from extracted turmeric (finger thumb size)
- 1/2 tbsp coconut oil
- 1 pc of tumeric leaf
- 1 stick of cinnamon
- 1/4 tbsp mustard seed
- 10pcs clove
- salt to taste
optional ingredients
- one stick of lemongrass
- 1 cup of coconut milk
Greek Yogurt
Today, I would like to share with everyone the recipe for Greek Yogurt.
It’s very simple, here is what you need:
- 2 cups of warm water (about 41 Celsius)
- 1 cup of Fernleaf full cream milk powder
- 1 table spoon of ready-made Greek yogurt (so that you do not need to use fresh yeast)
Here are the steps:
- Rinse your measuring cup and container in hot water to disinfect.
- Dissolve the milk powder in the warm water in the measuring cup.
- Run the Greek yogurt through a plastic sieve into the warm milk.
- Stir the milk to evenly distribute the yogurt.
- Sieve the milk/yogurt mixture into your prepared container.
- Cover container with lip.
- Wrap container in a small terry towel to keep the milk mixture warm while it ferments.
- Place in a warm place and leave it undisturbed for about 4 hours until set.
- When set, place in refrigerator to complete the setting process.
Hope you would enjoy the healthy yogurt. It would taste great if you mix some fruits such as banana to add some sweetness to the yogurt.
Make sure you leave some yogurt, so that you can used as a starter for subsequent yogurt production.
