Crispy & Frangrance Eggplant
I am happy to DIY finger licking snack for my tea-time, those ingredients as following;
- Eggplant – select young eggplant is less seeds
- Rosemary – own growth
- Egg yolk – village chicken is fragrance and orange yolk egg
- Baking flour / tempura flour
- Salted Butter
STEP 1 Mix tempura flour with egg yolks.
OR combination of baking flour, baking powder and egg yolks.
STEP 2 Add milk slowly and beat until batter is smooth.
STEP 3 Dip sliced eggplant into batter, thinly coated, allow excess to drip off.
STEP 4 Garnish with rosemary on top of eggplant.
STEP 5 Grill with butter until golden brown.
Tips:
(1) Home made tempura flour; 1 cup flour + 1 tbsp rice flour + 1 tbsp cornstarch.
(2) Use your normal batter recipe but use ICE water, with ice cube even better. The just dip are fry/ grill. No need buy prepackaged tempura flour.
(3) No to over mix the batter. I use a pair of chopsticks and roughly mix with a few stir and use immediately without worrying about the little lumps.
FOODS ART AND SCIENCE – Yolks contribute to the color, flavor and texture. Baking powder is a leavening agent, that cause batters to rise when baked. The leavener enlarges the bubbles which are already present in the batter produced through creaming of ingredients.
Banana Muffins
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 large over-ripe bananas, mashed
3/4 cup sugar
1 large egg
1/3 cup (85 grams) melted butter or veg oilSift all the dry ingredients into a mixing bowl. Stir in salt and sugar to mix well.In another small bowl lightly beat egg with a fork. Add in melted butter or veg oil and beat together to mix well.Make a well in the centre of the flour mixture, add mashed bananas and beaten egg mixture. Gentle fold the wet and dry ingredients until they just come together, about 6-7 strokes. Do not over mix otherwise muffins will be tough.Fill into muffin cups and bake in preheated oven 180C for about 20 minutes until a skewer inserted into the centre comes out clean. Remove and cool on wire rack.
WW Bread
- 2 cup WW flour (look brown colour)
- 2½ cups bread flour
- 1¾ cups milk
- 1 tbsp yeast
- 2 tbsp sugar
- 2 tbsp butter
- 1 tbs salt
- 1 tbsp butter, melted
