Greek Yogurt

Today, I would like to share with everyone the recipe for Greek Yogurt.

It’s very simple, here is what you need:

  • 2 cups of warm water (about 41 Celsius)
  • 1 cup of Fernleaf full cream milk powder
  • 1 table spoon of ready-made Greek yogurt (so that you do not need to use fresh yeast)

Here are the steps:

  • Rinse your measuring cup and container in hot water to disinfect.
  • Dissolve the milk powder in the warm water in the measuring cup.
  • Run the Greek yogurt through a plastic sieve into the warm milk.
  • Stir the milk to evenly distribute the yogurt.
  • Sieve the milk/yogurt mixture into your prepared container.
  • Cover container with lip.
  • Wrap container in a small terry towel to keep the milk mixture warm while it ferments.
  • Place in a warm place and leave it undisturbed for about 4 hours until set.
  • When set, place in refrigerator to complete the setting process.

Hope you would enjoy the healthy yogurt. It would taste great if you mix some fruits such as banana to add some sweetness to the yogurt.

Make sure you leave some yogurt, so that you can used as a starter for subsequent yogurt production.

Banana Muffins

BANANA MUFFINS
1 1/2      cups plain flour
1 tsp      baking powder
1/2 tsp   baking soda
1/2 tsp   salt
3 large   over-ripe bananas, mashed
3/4 cup  sugar
1 large   egg
1/3 cup (85 grams) melted butter or veg oilSift all the dry ingredients into a mixing bowl. Stir in salt and sugar to mix well.In another small bowl lightly beat egg with a fork. Add in melted butter or veg oil and beat together to mix well.Make a well in the centre of the flour mixture, add mashed bananas and beaten egg mixture. Gentle fold the wet and dry ingredients until they just come together, about 6-7 strokes. Do not over mix otherwise muffins will be tough.Fill into muffin cups and bake in preheated oven 180C for about 20 minutes until a skewer inserted into the centre comes out clean. Remove and cool on wire rack.
